One featured producer is Hyakusho Watanabe Mogamien, a small rice farm in Yamagata, Japan, run by second-generation farmer Susumu Watanabe. Using a unique naturally fermented fertilizer and patient cultivation methods, the farm produces rice that reflects its environment and the spirit of Hyakusho, or “many kinds of work.”
