Hello, my name is Andy Matsuda, and I am the chief instructor at Sushi Chief Institute in Los Angeles. I offer sushi chef training classes everyday at our school in Little Tokyo. And I often go out to promote Japanese food and culture at public venues and events.

I will fly to Denver on May 18 to attend the Rocky Mountain Food Safety Conference to be held on May 19 to provide a presentation about Sushi Safety  Study. This is the first time that such an organization has invited a sushi specialist as a speaker.  It is a positive sign on the growing awareness of sushi safety in this country.

I have been teaching sushi classes at cookware retailer Sur La Table every month since November 2009. The two-hour hands-on classes at its Original Farmer’s Market Store are always full. In most cases, participants are couples like a wife and a husband, a fiancé and a fiancée, or just friends. They are often  30 to 40 years old. They are very curious about sushi and are eager to know how to make their own sushi.

I will provide a brief history of sushi and teach the trick of making delicious sushi rolls and handrolls at home.
