Local Cooking in Japan / Tokushima Prefecture: Irimeshi
On July 10, Tokushima Prefecture Association explains “Irimeshi” at Sanagouchi, Tokushima Prefecture.
Irimeshi is a kind of sushi served after communal works such as cleaning of irrigation channel.
Rice is soaked with dry fish in a mixture of vinegar and soy source before cooking. Tokushima people uses Sudachi citrus for making vinegar because Sudachi citrus is a very popular local produce.
